Cheesy Italian Tortellini in the Crock Pot
1/2 pound ground beef
1/2 pound Italian sausage, casings removed
1 (16 ounce) jar marinara sauce
1 (4.5 ounce) can sliced mushrooms
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (9 ounce) package refrigerated or fresh cheese tortellini
1 cup shredded mozzarella cheese
1/2 cup shredded Cheddar cheese
Directions
1. Crumble the ground beef and Italian sausage into a large skillet. Cook over medium-high heat until browned. Drain.
2. Combine the ground meats, marinara sauce, mushrooms, and tomatoes in a slow cooker. Cover, and cook on LOW heat for 7 to 8 hours.
3. Stir in the tortellini, and sprinkle the mozzarella and cheddar cheese over the top. Cover and cook for 15 more minutes on LOW, or until the tortellini is tender.
Black Bean and Corn Salad
1/2 cup balsamic vinaigrette salad dressing
1/4 teaspoon seasoned pepper
1/4 teaspoon dried cilantro
1/8 teaspoon ground cayenne pepper
1/4 teaspoon ground cumin
2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green onions
1/2 cup red bell pepper, chopped
Directions
1. In a small bowl, mix together vinaigrette, seasoned pepper, cilantro, cayenne pepper, and cumin. Set dressing aside.
2. In a large bowl, stir together beans, corn, onion, green onions, and red bell pepper. Toss with dressing. Cover, and refrigerate overnight. Toss again before serving.
Buffalo Chicken Wing Dip
1 8oz pkg cream cheese, softened
1 bottle Frank’s Original Red Hot sauce
1 lb boneless, skinless chicken breasts, boiled and shredded
1 bottle ranch dressing
1 pkg pre-shredded jack cheese
- Spread cream cheese in the bottom of a 9×13 pan
- Layer hot sauce
- Layer chopped up chicken
- Layer ranch dressing
- Top with shredded cheese
- Bake at 350 deg for 25-35 minutes or until melted, bubbly, and browned!
- Serve with tortilla chips, Scoops, and celery sticks. I keep all these things on hand for a go-to potluck or party dish!
